Healthy Weet-Bix Slice

This no-bake, Healthy Weet-Bix Slice is easy to make and a great way to use up crushed Weet-Bix biscuits at the bottom of the box.

My son tells me the crushed Weet-Bix at the bottom of the box don’t taste the same as the formed breakfast biscuits. My husband agrees.

Is that true? Seriously!

So what to do with the broken Weet-Bix if they’re not going to eat them? Enter this Healthy Weet-Bix Slice - a great way to use up the leftover Weet-Bix pieces and create a sweet treat for snacks, lunchboxes, parties or simply just because.

It’s that easy, the kiddos could do it.

To make this no-bake, Healthy Weet-Bix Slice add into a food processor: 85g crushed Weet-Bix (or 3 biscuits crushed), a cup of rolled oats, 1 1/3 cup desiccated coconut, 1/4 cup chocolate protein powder (I used FUNCH Chocolate Kid-POW Shake), 1 tbsp cacao powder, 1/3 cup honey*, 2 tbsp tahini (or nut butter), 2 tbsp coconut milk, 2 tbsp warm water.

Blend until the mixture comes together.

If too dry, add some more water. If too wet, add some more Weet-Bix, oats or coconut.

Press the mixture into a lined square 24 x 24 cm (9 x 9 in) tin. Pour melted chocolate over the top and pop in the fridge for about 30 minutes before slicing. Then enjoy!

I like to store this in the freezer for a bit of extra crunch.

*NOTE: I try and limit the sweetener used as much as possible to suit our taste. You may want to add a little more honey or a little less. If you reduce the honey, you’ll need to add some other liquid to help it stick.

Healthy Weet-Bix Slice

Prep time: 10 mins | Setting time: 30mins

Ingredients:

  • 85g Weet-Bix, crushed (or 3 biscuits)
  • 1 cup rolled oats
  • 1 1/2 cup desiccated coconut
  • 1/4 cup chocolate protein (I used FUNCH Kid-Pow Shake)
  • 1 tbsp cacao powder
  • 1/3 cup honey
  • 2 tbsp hulled tahini (or nut butter)
  • 2 tbsp coconut milk
  • 2-3 tbsp warm water
  • 1/2 cup sugar-free choc chips, melted.

Instructions:

  1. In a food processor, add all the ingredients except the choc chips.
  2. Blend until the mixture combines. If too dry, add a bit more water. If too wet, add chrushed Weet-Bix, rolled oats or coconut.
  3. Press the mixture firmly into a square 24x24cm lined tin.
  4. Pour over the melted chocolate and spread out to cover the top.
  5. Place in the fridge for approximately 30 minutes or until set. Cut into pieces and place in a container in the fridge or freezer (I prefer the freezer).

Note: You can add a bit more honey if you prefer a sweeter slice. If reducing it, you'll need to add some more liquid to help it stick together.
