Vibrant Beetroot Dip
Kids love to dip and it’s one of the best tools to encourage them to try new food. This Vibrant Beetroot Dip will add a pop of colour on their plate.
I don’t know what it is, but kids have a fascination with dipping things into food - be it crackers, fruit or veggies.
Dips offer you the opportunity to increase their nutrient intake and introduce them to some new foods.
This Vibrant Beetroot Dip contains not only beetroot, which is high in antioxidants and a great source of fibre, but also cannellini beans and tahini.
Cannellini beans are a good vegetarian source of protein and are packed with B vitamins, along with iron, potassium and zinc. Tahini, made from sesame seeds, is an excellent calcium source for those who steer clear of dairy. It also contains healthy fats and fibre.
Serve this Vibrant Beetroot Dip with crackers or cut up veggie sticks. As it’s pop of colour draws your eye, it’s great for a party spread, afternoon snack or a lunchbox filler.

Vibrant Beetroot Dip
Prep time: 5 mins
Ingredients:
- 200g cooked beetroot (see note)
- 1 can cannellini beans, rinsed & drained
- 1/2 lemon, juiced
- 2 tbsp tahini
- 1/4 cup extra virgin olive oil
- 1 tsp sea salt
- 1 garlic clove (optional)
Instructions:
- In a food processor, process the beetroot until finely diced.
- Add the remaining ingredients and process until smooth. Serve with seed crackers and raw vegetable sticks.
Note: You can steam or roast the beetroot for this recipe. Alternatively, you can purchase pre-cooked beetroot only in water (don't choose vinegar) from fresh vegetable section of supermarkets.
